Dry Ingredients

  • 2 cups All-purpose flour Use fresh, quality flour for better results.
  • 1 tbsp Baking powder
  • 1 tsp Baking soda
  • 1 tbsp Ground cinnamon Freshly ground is best for flavor.
  • 1/2 tsp Ground nutmeg Freshly ground is preferable.
  • 1/2 tsp Salt

Wet Ingredients

  • 1/2 cup Unsalted butter Bring to room temperature.
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 3 large Eggs Add one at a time.
  • 1 tsp Vanilla extract
  • 1 cup Unsweetened applesauce
  • 2 cups Apples (peeled, cored, and chopped) Use a blend of sweet and tart apples.

Topping

  • 1 tbsp Ground cinnamon For topping.
  • 1/4 cup Granulated sugar For topping.

Preparation

  • Preheat the oven to 350°F (175°C) and prepare a 9x13-inch baking pan by lining it with parchment paper or greasing it with butter.
  • In a mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk thoroughly.
  • In another bowl, cream the butter, granulated sugar, and brown sugar together until fluffy and light.
  • Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.

Combining Ingredients

  • Alternate adding the dry mixture and applesauce to the creamed mixture, starting and finishing with the flour mixture. Mix gently.
  • Fold in the chopped apples carefully to avoid over-mixing.

Baking

  • Spread the batter into the prepared baking pan and sprinkle the cinnamon and sugar topping over the batter.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely in the pan before transferring to a wire rack for slicing and serving.

Notes

Consider using a variety of apples for flavor complexity. Add chopped nuts for extra texture, and serve with whipped cream or ice cream if desired. The cake can be stored for three days at room temperature or a week in the refrigerator.
