Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.
  • In a separate bowl, combine flour, baking soda, and ground cinnamon. Gradually add this mixture into the butter mixture, mixing just until combined.
  • Fold in the rolled oats and chopped apples into the dough.
  • Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, allowing space between each cookie.

Baking

  • Bake for approximately 10-12 minutes, until the edges turn golden brown.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For optimal chewiness, use firm apples like Granny Smith or Honeycrisp. Chill the dough for about 30 minutes for an even chewier texture. Store in an airtight container at room temperature for up to five days.
