Instructions

Preparation

  • Preheat your Blackstone griddle to medium-high heat. Slice the ribeye steak against the grain for tenderness, as well as the onion and bell pepper into strips.

Sauté Vegetables

  • Once the griddle heats, add olive oil and then the sliced onions and bell peppers. Sauté for approximately 5 to 7 minutes until vegetables are softened and caramelized. Set aside.

Cook Steak

  • Season the sliced ribeye with salt and pepper, then place it on the griddle. Cook for about 3 to 4 minutes on each side or until medium-rare to medium. Slice the steak thinner on the griddle.

Combine and Serve

  • Mix the cooked steak with sautéed vegetables on the griddle. Layer the provolone cheese on top, cover with a lid or aluminum foil, and let it melt before serving on toasted hoagie rolls.

Notes

For better texture, toast hoagie rolls on the griddle before serving. Consider variations with different cheeses or vegetables.
