Ingredients

Main Ingredients

  • 2 pounds boneless, skinless chicken thighs, diced The main protein for the dish
  • 4 cups chicken broth Used for braising the chicken
  • 1 can diced tomatoes (14.5 oz), undrained Adds moisture and acidity
  • 2 tablespoons Cajun seasoning Provides the dish with spice
  • to taste salt and pepper Adjust seasoning as preferred

For Serving

  • Cooked white rice Serves as a base for the étouffée
  • Chopped green onions For garnish

Instructions
 

Prepare the Roux

  • In a large pot, heat the vegetable oil over medium heat.
  • Gradually whisk in the flour and stir continuously, cooking until the roux reaches a dark caramel color (15 to 20 minutes).

Cook the Vegetables

  • Add chopped onion, bell pepper, and celery to the roux. Cook until softened (5 to 7 minutes).
  • Stir in the minced garlic and cook for an additional minute.

Cook the Chicken

  • Incorporate the diced chicken thighs and cook until browned (5 to 8 minutes).

Combine Ingredients

  • Add chicken broth, diced tomatoes, and Cajun seasoning to the pot.
  • Season with salt and pepper. Bring to a simmer and cook for about 30 minutes.

Serve

  • Serve the étouffée hot over cooked white rice, garnishing with chopped green onions.

Notes

Whisk continuously while making the roux to prevent burning. Customize spice levels by adjusting the amount of Cajun seasoning. Allow to rest for 10-15 minutes to enhance flavors before serving.
