  • 1 cup Cherry tomatoes Halved for added sweetness and acidity.
  • 1/4 cup Red onion Finely diced to add mild sharpness.
  • 1 cup Sweet corn Use fresh or drained canned corn for sweetness.
  • 1/4 cup Fresh cilantro Chopped, discard stems for best flavor.
  • 2 tablespoons Lime juice Freshly squeezed for brightness.
  • 2 tablespoons Olive oil For a velvety texture in the dressing.
  • to taste Salt Basic seasoning.
  • to taste Black pepper Basic seasoning.

Optional Additions

  • 1 whole JalapeƱo Finely chopped for heat.
  • 1/4 cup Feta cheese Crumbled for creaminess.

Instructions
 

Preparation

  • Select ripe avocados, slice in half, remove the pit, and scoop into a mixing bowl.
  • Rinse and halve the cherry tomatoes, adding to the mixing bowl.
  • Finely dice red onion and chop fresh cilantro before adding to the bowl.
  • If using, ensure sweet corn is fresh or drained if canned.

Making the Dressing

  • In a separate bowl, mix lime juice with olive oil, and season with salt and pepper to taste.

Combining

  • Gently combine the dressing with the salad ingredients in the mixing bowl.
  • Adjust seasoning as necessary and enjoy immediately.

Notes

For best freshness, consume the salad within 24 hours. Store in an airtight container. To prevent browning, store dressing separately from the salad ingredients if making in advance.
