Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper.

Mixing Wet Ingredients

  • Mash the overripe bananas in a mixing bowl using a fork or potato masher until almost smooth.
  • Add the melted butter to the mashed bananas and mix until smooth.
  • Stir in the granulated sugar until the mixture is smoother and lighter.
  • Beat in the large egg and mix in the vanilla extract.

Mixing Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
  • Gradually fold the dry mixture into the wet banana mixture until just combined, avoiding overmixing.
  • If using, gently fold in the chopped nuts or chocolate chips.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 55 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Cooling

  • Allow the banana bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes

To speed up banana ripening, place them in a brown paper bag for a few days. Customize your banana bread with cocoa powder or peanut butter if desired. Freeze for up to 3 months for longer storage.
