  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt

Preparation

  • Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for a standard oven.
  • Grease and line a 23 x 13 cm (9 x 5 inch) loaf tin with baking paper, ensuring an overhang of at least 3 cm (1 inch).

Mixing Ingredients

  • In a large mixing bowl, mash the ripe bananas until smooth or slightly chunky.
  • Add vegetable oil, milk, granulated sugar, brown sugar, eggs, and vanilla extract. Stir until fully combined.

Combining Dry Ingredients

  • Sift the all-purpose flour, baking powder, and salt over the wet mixture and gently stir until just incorporated.

Baking

  • Pour the batter into the prepared loaf tin.
  • Bake for 45 to 55 minutes, or until golden brown and a skewer inserted in the center comes out clean.
  • Cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overly ripe bananas for sweetness. Variations can include adding nuts, chocolate chips, or spices like cinnamon.
