Preparation

  • In a skillet, heat the olive oil over medium heat.
  • Add the diced chicken breasts, season with salt and pepper, and sauté for about 5 to 7 minutes until cooked through.
  • In a small bowl, combine mayonnaise, sweet chili sauce, and Sriracha for the spicy mayo drizzle.
  • Cook jasmine rice according to package instructions or in a rice cooker.

Assembly

  • Layer cooked jasmine rice at the bottom of each serving bowl.
  • Add sautéed chicken and mixed vegetables on top.
  • Drizzle the spicy mayo over the bowl and sprinkle with chopped green onions.
