Chimichanga Filling

  • 1 lb Ground beef Use quality ground beef for best flavor.
  • 1 medium Onion, diced Adds sweetness and depth.
  • 2 cloves Garlic, minced Enhances savory flavor.
  • 1 packet Taco seasoning Can vary in spice level.
  • 1 cup Salsa Choose spiciness according to preference.
  • 1 cup Refried beans Using canned is convenient.
  • 4 large Flour tortillas Must be sturdy for cradling filling.
  • 1 cup Shredded cheese Cheddar or Monterey Jack works well.
  • 2 tbsp Cooking oil For frying or brushing before baking.

Instructions
 

Preparation

  • Heat a large skillet over medium heat and add ground beef and diced onion. Cook until browned, about 5-7 minutes.
  • Drain any excess grease and stir in garlic, taco seasoning, and salsa. Simmer for 3-4 minutes until flavors meld.
  • Lay out tortillas, spread refried beans on each, then spoon the beef mixture and sprinkle shredded cheese on top.
  • Roll the tortillas tightly, securing the filling inside.

Cooking

  • Preheat oven to 400°F (200°C) or heat oil for frying.
  • For baking, brush chimichangas with oil and bake for 18-20 minutes until golden brown.
  • For frying, heat oil in a skillet and fry each chimichanga for about 2-3 minutes on each side until golden.
  • Let cool slightly before serving with optional toppings like sour cream, guacamole, or salsa.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2-3 months. Reheat in the oven for best results.
