Preparation

  • Begin by heating two tablespoons of olive oil in a large pot over medium heat.
  • Add the beef chuck cubes, ensuring they are evenly spaced, and sear for 5 to 7 minutes on each side until browned.
  • Once browned, add the chopped onion and minced garlic, cooking for an additional 3 to 5 minutes until the onion is translucent.
  • Add the sliced carrots and cubed potatoes, stirring to combine.
  • Mix in the tomato paste, dried thyme, paprika, bay leaves, salt, and pepper, stirring to ensure an even coating.
  • Pour in the beef broth and bring the mixture to a boil.

Cooking

  • Reduce heat to low, cover the pot, and let the stew simmer for about 1.5 to 2 hours, stirring occasionally.
  • Once the beef is fork-tender, remove the bay leaves and adjust seasoning if necessary.

Notes

To customize the stew, consider using different vegetables or adding a splash of red wine for depth. Store leftovers in an airtight container for up to 3-4 days or freeze for up to three months.
