Ingredients
  

For the Marinade

  • ½ cup bourbon
  • ½ cup soy sauce
  • cup brown sugar
  • ¼ cup honey
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

For Cooking

  • 1 pound chicken thighs, boneless and skinless
  • 2 tablespoons olive oil For greasing the griddle
  • Salt to taste salt and pepper
  • Optional amount sliced green onions for garnish

Preparation

  • In a bowl, combine bourbon, soy sauce, brown sugar, honey, minced garlic, and minced ginger. Mix until the brown sugar dissolves completely.
  • Add chicken thighs to the marinade, ensuring each piece is well-coated. Cover with plastic wrap and refrigerate for at least one hour.

Cooking

  • Preheat the Blackstone griddle to medium-high heat. Once hot, drizzle in olive oil.
  • Remove chicken from the marinade, allowing excess liquid to drip off. Season lightly with salt and pepper.
  • Place chicken thighs on the griddle and cook for 5 to 7 minutes on one side until golden brown.
  • Flip the chicken and cook for another 5 to 7 minutes, reaching an internal temperature of 165°F.
  • Brush with reserved marinade towards the end of cooking for added flavor.
  • Once cooked, let the chicken rest for a few minutes before slicing. Garnish with sliced green onions.

Notes

For more intense flavor, consider marinating the chicken overnight. You can substitute bourbon with apple cider or whiskey if desired. Use a meat thermometer for perfect cooking.
