  • 1 pinch Salt Balances sweetness

For the Crème Brûlée Topping

  • 1/4 cup Granulated sugar Forms the caramelized topping
  • 1 teaspoon Additional vanilla extract Adds aromatic depth to the topping

Instructions

Preparation

  • Preheat oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers, melted butter, and sugar until you have a moist, crumbly mixture.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
  • Bake the crust for about 10 minutes until lightly golden, then allow it to cool completely.

Making the Cheesecake Filling

  • In a large bowl, beat together the softened cream cheese and sugar until smooth.
  • Gradually incorporate eggs one by one, making sure each is blended fully before adding the next.
  • Mix in sour cream, vanilla extract, and salt until well combined, scraping the bowl sides.

Baking the Cheesecake

  • Pour the cheesecake filling onto the cooled crust and smooth the top with a spatula.
  • Bake for 50-60 minutes; the center should look slightly jiggly but set. Turn off the oven and crack the door open to cool gradually.

Crème Brûlée Topping

  • After the cheesecake has cooled in the refrigerator (preferably overnight), sprinkle a layer of granulated sugar on top.
  • Use a culinary torch to caramelize the sugar evenly until it turns amber. Alternatively, broil in the oven for 1-2 minutes, watching closely.
  • Allow the topping to cool for a few minutes before slicing and serving.

Notes

Use room-temperature cream cheese for a smooth filling. Avoid overmixing to prevent cracks, and consider using a water bath for creamier texture. Flavor variations can include citrus zest or dark brown sugar for the topping.
