Chicken

Vegetables

Sauce

  • 1 cup heavy cream Creates the rich creamy sauce.

Preparation

  • Bring a large pot of salted water to a boil and cook the fettuccine or penne according to package instructions until al dente. Drain and set aside.
  • Season both sides of the chicken breasts with Cajun seasoning.

Cooking Chicken and Vegetables

  • Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side until golden brown and cooked through.
  • Remove chicken from the skillet and let it rest, then slice into thin strips.
  • In the same skillet, add sliced bell peppers and onion, cooking for 5-6 minutes until tender.
  • Pour in the chicken broth and bring the mixture to a gentle simmer.
  • Slowly pour in the heavy cream and cook until the sauce thickens slightly, about 3-4 minutes.

Final Assembly

  • Add the cooked pasta and sliced chicken back to the skillet, tossing to coat everything in the sauce.
  • Season with salt and pepper to taste. Serve warm with grated Parmesan cheese on top.

Notes

For a lighter dish, use half-and-half instead of heavy cream. Customize the level of spice or add more vegetables as desired.
