  • 1/4 cup Mayonnaise Adds creaminess to the filling.

  • 1-2 dashes Hot sauce Adjust to taste.

Preparation

  • Place the six large eggs in a pot and cover with water by about an inch. Bring to a boil, then reduce to a medium boil and cover. Set timer for 12-14 minutes.
  • After boiling, transfer eggs to a bowl of ice water to cool for 5-10 minutes.
  • Peel the cooled eggs under running water to help remove stubborn bits.
  • Slice each egg in half lengthwise and scoop the yolks into a mixing bowl.
  • Mash the yolks until crumbly and smooth.

Mixing

  • Add mayonnaise, Dijon mustard, Cajun seasoning, hot sauce, salt, and black pepper to the yolks. Mix until creamy and uniform.
  • Taste and adjust seasonings as needed.

Filling and Garnishing

  • Use a spoon or piping bag to fill each egg white with the yolk mixture.
  • Garnish with paprika and chopped green onions.

Notes

For best results, use fresh eggs and cool them rapidly after boiling. Adjust spice levels according to taste, and feel free to experiment with different garnishes.
