Instructions
 

Preparation

  • Heat a large pot over medium heat. Drizzle with olive oil and warm up.
  • Add the diced chicken and sliced sausage to the pot. Cook until browned.
  • Stir in the onion, bell pepper, and celery. Cook for 5-7 minutes until soft.
  • Add garlic and cook for an additional minute until fragrant.

Cooking

  • Add the rice, Cajun seasoning, thyme, salt, and pepper. Stir well.
  • Pour in the chicken broth and diced tomatoes. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 20-25 minutes.
  • Stir in the shrimp and cook for an additional 5-7 minutes until shrimp turn pink.
  • Garnish with green onions and serve hot.

Notes

Taste and adjust seasoning while cooking. Add cayenne or jalapeƱos for extra heat. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
