Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion, bell pepper, and minced garlic, and sauté until soft and fragrant, about 3 to 5 minutes.
  • Introduce the chicken pieces and cook until browned on all sides, around 5-7 minutes.
  • Stir in the rice and allow it to toast slightly.

Cooking

  • Pour in the coconut milk and chicken broth, then add the dried thyme, paprika, salt, and black pepper.
  • Stir well to combine all ingredients and bring to a boil.
  • Reduce heat to a simmer, cover, and cook for about 20-25 minutes until the rice is cooked.
  • Fluff the rice with a fork and serve hot, garnished with cilantro if desired.

Notes

Feel free to adjust spices and add vegetables like diced carrots or peas. This recipe doubles or triples easily, making it great for gatherings.
