For the Cream Cheese Frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until well incorporated.
  • In another bowl, whisk together the eggs and vegetable oil until smooth.
  • Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined.
  • Fold in the shredded carrots and crushed pineapple. If using nuts, fold those in as well.

Baking

  • Pour the batter into the prepared baking pan and smooth the top with a spatula.
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Frosting and Serving

  • Allow the cake to cool completely in the pan on a wire rack.
  • In a large bowl, beat the softened cream cheese and butter together until creamy and smooth.
  • Gradually mix in the powdered sugar, then add the vanilla extract and salt. Continue beating until fluffy.
  • Once the cake is cool, spread the frosting evenly over the top with a spatula.

Notes

For optimal results, use fresh spices, consider toasting nuts, and refrigerate the bars for 30 minutes after frosting to set. Decorate with nuts or carrot shavings if desired.
