Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the russet potatoes thoroughly and pierce them multiple times with a fork.
  • Place the potatoes directly onto the oven rack or a baking sheet.

Baking the Potatoes

  • Bake the potatoes for about 45 minutes, or until they are easily pierced with a fork.

Cooking the Beef

  • In a skillet over medium heat, add one pound of ground beef. Cook for about 7 to 10 minutes, or until browned.
  • Drain excess fat, add taco seasoning and water, and simmer for a few minutes.

Preparing the Filling

  • In a large mixing bowl, combine the cooked ground beef, drained black beans, corn, and diced tomatoes, mixing thoroughly.

Assembling the Bowls

  • Remove the baked potatoes from the oven and cool slightly. Cut each potato open lengthwise and fluff the insides.
  • Spoon the beef mixture into each potato and top with shredded cheese.
  • Return to the oven for 5 to 10 minutes until the cheese is melted.

Serving

  • Serve hot, garnished with sour cream and green onions.

Notes

Feel free to customize toppings with avocado, jalapeños, or additional vegetables. Leftovers can be stored in airtight containers for up to 4 days in the refrigerator.
