  • 2 medium sweet potatoes, peeled and cubed
  • 1 pound boneless, skinless chicken breasts, cut into pieces
  • 1 cup cooked rice (white or brown)
  • ½ cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha sauce (adjust to taste) For added spiciness
  • ½ teaspoon cumin
  • optional: sautéed or steamed vegetables (e.g., broccoli, spinach, or bell peppers)
  • Fresh cilantro or parsley for garnish

For Seasoning the Chicken and Sweet Potatoes

  • 2 tablespoons olive oil Divided for sweet potatoes and chicken
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the cubed sweet potatoes with one tablespoon of olive oil, paprika, garlic powder, salt, and pepper until well-coated.
  • Spread the sweet potatoes on a baking sheet lined with parchment paper and roast for 20-25 minutes, flipping them halfway.

Cooking the Chicken

  • While the sweet potatoes are roasting, season the chicken pieces with garlic powder, onion powder, salt, and pepper.
  • Heat the remaining tablespoon of olive oil in a skillet over medium-high heat and add the seasoned chicken, cooking for 5-7 minutes until golden brown and cooked through.
  • Set the chicken aside to rest.

Making the Sauce

  • In a bowl, whisk together Greek yogurt, lime juice, sriracha, and cumin. Season with salt to taste.

Assembly

  • Cook your rice according to package instructions.
  • Optionally, sauté or steam any vegetables to add to your bowl.
  • Layer rice, roasted sweet potatoes, chicken, and any vegetables in a bowl.
  • Drizzle with the creamy sauce and garnish with fresh cilantro or parsley.

Notes

Ensure sweet potatoes are cut uniformly for even roasting. Consider using pre-cooked rice for saving time when busy. This recipe is versatile; feel free to substitute proteins and add any preferred vegetables.
