Preparation

  • Start by gathering all your ingredients, ensuring your chicken is thawed.
  • In a medium-sized bowl, whisk together olive oil, lemon juice, minced garlic, soy sauce, honey, oregano, black pepper, and salt until well combined.
  • Place the chicken in a zip-lock bag or glass dish and pour the marinade over, ensuring it's evenly coated. Seal the bag or cover the dish.
  • Refrigerate for at least 30 minutes, ideally longer (4 hours or overnight) for better flavor.

Cooking

  • Remove the chicken from the refrigerator and let it sit at room temperature for about 30 minutes.
  • Preheat your grill to medium-high heat or oven to 400°F.
  • For grilling, place chicken on the grill and cook for 5 to 6 minutes per side, until the internal temperature reaches 155°F.
  • For baking, arrange marinated chicken on a baking sheet and bake for 18 to 20 minutes until fully cooked.
  • Allow the chicken to rest for a few minutes before slicing.

Notes

Feel free to adapt the marinade to your taste by adding red pepper flakes or other herbs. It works with multiple proteins like pork and tofu as well.
