  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Wet Ingredients

  • 4 large eggs
  • 1 cup chicken broth
  • ½ cup milk

Main Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the dry ingredients: flour, baking powder, garlic powder, onion powder, salt, and pepper.
  • In a separate bowl, whisk together the eggs, then add the chicken broth and milk.
  • Stir in the cooked, shredded chicken and mixed vegetables.

Mixing

  • Gradually pour the chicken mixture into the dry ingredients and gently mix until just combined.
  • Fold in the shredded cheese.

Baking

  • Pour the batter into a greased cake pan, smoothing the surface.
  • Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Serving

  • Let the chicken cake cool slightly before slicing and serving.

Notes

For the best flavor, use freshly cooked chicken. Feel free to add diced bell peppers, spinach, or broccoli. Use parchment paper along with greasing for easier removal. Allow the cake to rest before transferring to maintain its structure.
