Preparation

  • Pound the chicken breasts to an even thickness of about half an inch and season both sides with salt and pepper.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder.
  • In another bowl, mix together buttermilk, egg, and hot sauce.

Dredging

  • Dredge each chicken piece in the seasoned flour, dip it into the buttermilk mixture, and then return to the flour for a second coating.
  • Shake off any excess flour to avoid clumping.

Frying

  • Heat oil in a large skillet over medium heat to 325°F.
  • Carefully add the coated chicken pieces, frying for about 3-5 minutes on each side until golden brown and cooked through.
  • Drain the cooked chicken on paper towels.

Notes

Consider marinating the chicken in buttermilk overnight for added flavor. Keep an eye on the oil temperature to avoid soggy chicken or burnt coating. Let fried chicken rest after cooking to maintain juiciness.
