Cookie Base

Chocolate Ganache

  • 1/2 cup Heavy cream Creates a creamy ganache.
  • 4 ounces Dark chocolate, chopped Forms the ganache base.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
  • Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  • Gradually blend the dry ingredients into the wet mixture until fully incorporated.
  • Fold in the dark chocolate chips and freeze-dried raspberries using a spatula.
  • Drop tablespoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Baking

  • Bake the cookies for 10 to 12 minutes, or until golden around the edges. The centers may appear slightly underbaked.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Making Ganache

  • In a saucepan, heat the heavy cream until it simmers. Pour the hot cream over the chopped dark chocolate, let sit for a minute, then stir until smooth.
  • Once the cookies have cooled, drizzle the ganache over the top and serve.

Notes

Use high-quality dark chocolate for best results. Chill dough if it spreads too much during baking.
