Dry Ingredients

  • 1.5 cups all-purpose flour Provides structure.

Cinnamon-Sugar Swirl

  • 2 tablespoons light brown sugar For the swirl on top.
  • 1 teaspoon ground cinnamon Enhances the cinnamon flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
  • In a large bowl, mash the ripe bananas until smooth, then mix in the melted butter, granulated sugar, light brown sugar, egg, and vanilla extract until combined.
  • In another bowl, whisk together the flour, baking soda, cinnamon, and salt until combined.
  • Gently fold the dry ingredients into the wet ingredients, being careful not to overmix.
  • In a small bowl, combine the light brown sugar and ground cinnamon for the swirl.

Assembly

  • Pour half of the batter into the greased loaf pan. Sprinkle half of the cinnamon-sugar mixture on top.
  • Add the remaining batter and top with the rest of the cinnamon-sugar mixture. Use a knife to gently swirl it into the batter.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

Notes

For best results, use very ripe bananas. Feel free to customize with nuts or chocolate chips. Store in an airtight container to keep moist.
