Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth, then stir in the melted butter.
  • Mix in the baking soda and salt, then add the sugar, beaten egg, and vanilla extract, stirring until well combined.
  • Gently incorporate the all-purpose flour until just combined, being careful not to overmix.

Cinnamon Swirl Assembly

  • In a small bowl, mix together the ground cinnamon and brown sugar.
  • Pour half of the banana bread batter into the greased loaf pan and sprinkle half of the cinnamon-sugar mixture on top.
  • Top with the remaining batter and finish with the rest of the cinnamon-sugar mix.
  • Gently swirl the mixture with a knife to create a marbled effect.

Baking

  • Bake in the preheated oven for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

If bananas aren't ripe enough, place them in a brown paper bag to speed up the process. Consider adding nuts or chocolate chips for extra flavor. Store the bread wrapped tightly for 3-4 days or freeze for up to 3 months.
