Preparation of Marinade

  • In a medium-sized bowl, whisk together the Dijon mustard, fresh orange juice, fresh lemon juice, and olive oil until smooth.

Marinating Chicken

  • Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over, ensuring each piece is well coated.
  • Massage marinade into the chicken and refrigerate for at least 30 minutes, preferably for 1-2 hours.

Grilling

  • Preheat grill to medium-high heat.
  • Remove chicken from marinade and discard any leftover marinade.
  • Place chicken on the hot grill and cook for 6 to 7 minutes on one side, then flip and cook for another 6 to 7 minutes.
  • Ensure chicken reaches an internal temperature of 165°F and let rest for a few minutes before serving.

Notes

For deeper flavor, consider marinating overnight but not longer than 24 hours to avoid texture issues. Experiment with different citrus juices or add fresh herbs for complexity.
