Preparation

  • Wash the kale leaves thoroughly to remove dirt and debris.
  • Remove tough stems from kale leaves and chop into bite-sized pieces.
  • Drizzle olive oil over kale and sprinkle with salt, then massage the leaves for 2-3 minutes.
  • Slice seasonal fruits into bite-sized pieces and add to the massaged kale.
  • Add pomegranate seeds and pepitas to the salad, ensuring even distribution.

Dressing

  • In a small bowl, whisk together lemon juice, a dash of olive oil, salt, and black pepper.
  • Pour the dressing over the salad mixture and toss gently to combine.
  • Serve immediately or let sit for a few moments to allow flavors to meld.
