Dressing

  • 1/4 cup Olive oil Healthy fats for heart health
  • 2 tablespoons Red wine vinegar Brightens flavors with acidity
  • 1 teaspoon Dijon mustard Flavor enhancer and emulsifier
  • 1 teaspoon Honey Natural sweetener
  • to taste Salt and pepper Enhances flavors

Instructions
 

Preparation

  • Rinse the romaine lettuce under cold water and dry it thoroughly.
  • Chop the lettuce into bite-sized pieces.
  • Halve the cherry tomatoes and slice the cucumbers into thin discs.
  • Peel and shred or finely grate the carrot.
  • Thinly slice the red onion.

Assembly

  • In a large mixing bowl, combine the prepared romaine lettuce, cherry tomatoes, cucumbers, carrots, and red onion. Stir gently to combine.

Dressing

  • In a mason jar, add olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper. Seal and shake well to emulsify.
  • Drizzle the dressing over the salad and toss until all ingredients are coated.
  • If desired, sprinkle with grated parmesan cheese before serving.

Notes

Store dressing separately if preparing ahead to prevent sogginess. This salad is adaptable; feel free to add seasonal vegetables or proteins as desired.
