For the cake

  • 1 cup sour cream Ensures the cake remains tender.
  • 1 teaspoon vanilla extract Adds warmth and flavor.

For the streusel topping

  • 1 cup all-purpose flour Forms the base of the streusel.
  • 1/2 cup rolled oats Adds texture.
  • 2 teaspoons ground cinnamon Provides spiced flavor.
  • 3/4 cup packed brown sugar Sweetens the streusel.
  • 6 tablespoons cold butter Creates a crumbly texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, blend together the sugars and room temperature butter until light and fluffy (about 3-4 minutes).
  • Add the eggs one at a time, mixing well after each addition, then stir in the sour cream and vanilla extract.

Baking

  • Gradually add the dry flour mixture into the wet ingredients until just combined.
  • Pour the batter into the prepared baking dish, reserving about a cup of batter for the streusel.
  • In a separate bowl, mix the reserved batter with the streusel ingredients until crumbly, then sprinkle over the cake batter.
  • Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Optional Icing

  • For added sweetness, mix powdered sugar with milk and vanilla to create an icing. Drizzle over the cooled cake.

Notes

Ensure all ingredients are at room temperature. Avoid overmixing the batter to keep the cake light and fluffy. Can add fruits or nuts as desired.
