Ingredients
  

Main Ingredients

  • 4-5 lbs corned beef brisket
  • 1 large head cabbage, cut into wedges
  • 4 medium-sized carrots, sliced
  • 4 large potatoes, quartered
  • 1 large onion, chopped
  • 4 cloves garlic, minced

Seasonings and Liquids

  • 1 tsp black pepper
  • 2 bay leaves
  • 1 tbsp dried oregano
  • 1 tsp crushed red pepper flakes (optional)
  • 1 cup apple cider vinegar
  • 12 oz beer (lager or pale ale)
  • water (enough to cover the beef)
  • olive oil for sautéing
  • salt, to taste

Instructions
 

Preparation

  • Trim excess fat from the corned beef brisket and rinse under cold water for 1-2 minutes.
  • Set the brisket aside while preparing the other ingredients.

Slow Cooking

  • In a slow cooker, place the chopped onions and minced garlic at the bottom.
  • Place the brisket on top, fat side up, and sprinkle the seasoning packet over it.
  • Add bay leaves, oregano, black pepper, beer, apple cider vinegar, and enough water to cover the meat.
  • Set the slow cooker to low and cook for approximately 8 to 10 hours.

Serving

  • Once cooked, carefully remove the brisket and slice against the grain.
  • Serve alongside cooked vegetables including carrots and potatoes.
  • For the cabbage, sauté it in olive oil with garlic, black pepper, and salt until tender.

Notes

You can substitute beer with low-sodium beef broth if needed. This dish can be prepared in advance as flavors deepen when reheated. Adjust seasoning before serving for optimal taste.
