  • 4 pieces Chicken breasts Opt for skinless for a healthier option.
  • 2 tablespoons Olive oil For cooking the chicken.
  • 8 ounces Sliced mushrooms Use cremini or button mushrooms.
  • 4 cloves Fresh garlic Minced for robust flavor.
  • 1 cup Chicken broth Low sodium preferred.
  • 1 cup Heavy cream For a thick and creamy sauce.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 2 tablespoons Fresh parsley For garnish, chopped.

Instructions
 

Preparation

  • Heat a generous drizzle of olive oil in a large skillet over medium heat.
  • Season both sides of the chicken breasts with salt and pepper.
  • Once the oil is shimmering, add the chicken breasts to the skillet and cook for approximately 6 to 7 minutes on each side, or until browned and no longer pink in the center.
  • Remove chicken from the skillet and set aside.

Cooking the Sauce

  • Add sliced mushrooms to the same skillet and sauté for about 5 minutes until browned.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the chicken broth and let it simmer briefly.
  • Slowly stir in the heavy cream and bring to a gentle simmer until the sauce thickens.

Combining

  • Return the cooked chicken breasts to the skillet, coating them in the creamy mushroom sauce.
  • Allow to simmer together for a few minutes, then garnish with freshly chopped parsley before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. Store leftovers in an airtight container for up to 4 days in the refrigerator.
