Preparation

  • Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add the chicken breasts to the hot skillet and cook undisturbed for about 5-7 minutes on each side, until golden brown and cooked through.
  • Remove the chicken from the skillet and set it aside on a plate.

Cooking the Sauce

  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the sliced mushrooms to the skillet and cook for about 5 minutes, stirring frequently, until the mushrooms have softened and released moisture.
  • Mix in the chopped spinach and cook until wilted, about 1-2 minutes.
  • Pour in the chicken broth and bring the mixture to a gentle simmer.
  • Stir in the heavy cream and allow the sauce to simmer, thickening slightly. Adjust seasoning with additional salt and pepper if needed.

Finishing Touch

  • Return the chicken breasts to the skillet, allowing them to reheat in the creamy mushroom sauce for about 5 minutes.
  • Garnish with freshly chopped parsley before serving.

Notes

Customize mushrooms to your liking; shiitake or portobello can provide robust flavor. Avoid overcrowding the pan to ensure even browning of the chicken. If the sauce thickens too much, add a splash of cream or broth when reheating.
