Dressing

Preparation

  • Begin by preparing your vegetables. Rinse the cucumbers thoroughly under cold water, then chop them into small, bite-sized pieces.
  • Wash and dice the tomatoes into similar-sized pieces as the cucumbers.
  • Finely chop the medium red onion and dice the bell pepper.
  • Rinse the parsley and chop it finely.
  • In a large mixing bowl, combine all the chopped vegetables and parsley.

Mixing

  • Juice the lemon over the salad and drizzle with olive oil. Season with salt and black pepper to taste.
  • Toss all the ingredients together until evenly coated with the dressing.

Notes

Let the salad sit for 10-15 minutes before serving to allow the flavors to meld together. If storing, keep undressed until serving to maintain crunchiness.
