  • 2 medium Fresh cucumbers
  • 0.5 teaspoon Salt
  • 3 tablespoons Sesame oil
  • 2 tablespoons Light soy sauce
  • 1 teaspoon Sugar
  • 2 tablespoons Rice vinegar
  • 1 teaspoon Chili oil Optional for spiciness
  • 1 tablespoon Sesame seeds
  • 1 clove Minced garlic

Preparation

  • Rinse the cucumbers thoroughly and slice one end at an angle, continuing to slice at the same angle to create oval-shaped pieces.
  • Place the cucumber slices in a bowl and sprinkle half a teaspoon of salt over the top. Toss gently to ensure even coating and refrigerate for at least 20 minutes.
  • Drain the accumulated water from the bowl and rinse the cucumber slices under cold water for about ten seconds to remove excess salt.

Dressing

  • In the bowl with cucumbers, add the sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and minced garlic. Mix thoroughly until each cucumber slice is well coated in the dressing.

Serving

  • Once mixed, the Easy Asian Cucumber Salad is ready to be served. Enjoy immediately or let it sit to enhance the flavor.

Notes

This salad is best eaten fresh, but can be stored in an airtight container in the refrigerator for a day. Keep extra dressing separate to avoid sogginess.
