Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and mash the ripe bananas in a mixing bowl using a fork until smooth with a few lumps.
  • Stir in the melted butter.
  • Mix in the baking soda and a pinch of salt.
  • Add the sugar, beaten egg, and vanilla extract, and mix thoroughly.
  • Gradually fold in the all-purpose flour until just combined, avoiding overmixing.
  • Pour the batter into a greased 4x8 inch loaf pan and spread evenly.

Baking

  • Bake for 50 to 60 minutes, monitoring closely for doneness.
  • Check if done by inserting a toothpick; it should come out clean or with a few crumbs.
