Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 4x8 inch loaf pan.
  • In a large mixing bowl, mash the ripe bananas until smooth, leaving some chunks, then mix in the melted butter.
  • Add sugar, beaten egg, and vanilla extract to the banana-butter mixture and stir until combined.
  • Sprinkle baking soda and salt over the mixture, then gently fold in the all-purpose flour until just incorporated.
  • Pour the mixture into the prepared loaf pan and bake in the preheated oven for 55-60 minutes, or until a toothpick inserted comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
