For the Chicken

  • 2 pounds Chicken (thighs, breasts, or drumsticks) Flexibility based on preferences.

Preparation

  • In a small bowl or mason jar, combine Greek yogurt, olive oil, fresh lemon juice, minced garlic, dried oregano, paprika, garlic powder, salt, and black pepper. Whisk together until well combined.
  • Place chicken in a large zip-top bag or shallow dish. Pour marinade over chicken and seal or cover, massaging the chicken to ensure it's well coated.
  • Refrigerate for at least 30 minutes, or up to 24 hours for maximum flavor.

Cooking

  • Remove chicken from the marinade, letting excess drip off. Cook by grilling, baking, or sautéing until fully cooked and golden.

Notes

For best results, marinate overnight. This versatile marinade can also work with pork, lamb, and fish. Store leftovers in an airtight container in the refrigerator for 3-4 days.
