Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking sheet by greasing it lightly.
  • In a large mixing bowl, whisk together the dry ingredients: cornmeal, all-purpose flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the wet ingredients: honey, milk, melted butter, and egg until smooth.

Mixing and Baking

  • Gradually combine the wet mixture into the dry ingredients, stirring gently until just mixed.
  • Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake for 10–12 minutes or until the edges are golden brown.
  • Remove from the oven and let cool on a wire rack for about 10 minutes before serving.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Best served warm with a pat of butter or a drizzle of honey. Store in an airtight container for 3-4 days.
