Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with softened butter or non-stick spray.
  • Arrange your chosen fruit at the bottom of the pan, and sprinkle a tablespoon of sugar over the fruit.

Mixing the Batter

  • In a large bowl, cream together 1 cup of softened butter and 1 cup of granulated sugar until light and fluffy.
  • Add the eggs one at a time, along with 0.5 cup of milk and 2 teaspoons of vanilla extract, mixing until combined.
  • In a separate bowl, whisk together 1 cup of flour, 0.5 teaspoons of baking powder, 0.5 teaspoons of baking soda, and 0.25 teaspoons of salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined. Avoid over-mixing.

Baking

  • Pour the batter over the arranged fruit and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then invert it onto a serving plate.

Notes

Consider using cinnamon or nutmeg for extra flavor. For variations, try red plums, figs, or pears. Ensure fruits are ripe yet firm for best results.
