Instructions

Preparation

  • In a mixing bowl, combine minced garlic, chopped rosemary, and chopped thyme. Stir in olive oil and mix well to form a marinade.
  • Season chicken breasts with salt and pepper, then rub the herb and garlic mixture over each breast. Let rest for about 20 minutes.
  • Peel and chop russet potatoes. Place them in a pot, cover with cold water, and add a pinch of salt.
  • Bring the pot to a boil, reduce heat to medium, and cook the potatoes until fork-tender, about 15-20 minutes. Drain and return to pot.
  • Add unsalted butter and whole milk to the potatoes, mash until creamy, and season with salt and pepper to taste.

Cooking Chicken

  • Heat a skillet over medium heat and add a tablespoon of olive oil. Add marinated chicken breasts and cook for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  • Remove chicken from skillet and cover with foil to rest.

Glazing the Carrots

  • In the same skillet, add sliced carrots and sauté over medium heat for about 5 minutes until tender.
  • Sprinkle brown sugar and honey over the carrots, stirring to coat. Continue cooking for an additional 3-4 minutes until glazed and slightly caramelized.

Notes

For deeper flavor, marinate the chicken overnight. For a lighter version of mashed potatoes, substitute Greek yogurt for some or all of the butter and milk.
