Preparation

  • In a large bowl, mix all-purpose flour, almond flour, and salt thoroughly.
  • In another bowl, beat unsalted butter, granulated sugar, and brown sugar together until light and fluffy.
  • Add the vanilla extract and the egg to the butter-sugar mixture, mixing until just combined.
  • Gradually add the flour mixture to the wet ingredients, mixing on low speed until the dough comes together.
  • Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.

Baking

  • Preheat your oven to 350°F (175°C).
  • Roll out the chilled dough on a lightly floured surface to a thickness of about 1/4 inch.
  • Use a heart-shaped cookie cutter to cut out cookies and pipe ghost cutouts with a piping tip.
  • Transfer cookies to a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
  • Allow cookies to cool completely before spreading jam between two cookies and finishing with a dusting of powdered sugar.
