Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the molasses and egg until well combined.
  • In another bowl, whisk together the baking soda, ground ginger, fresh grated ginger, ground cinnamon, cloves, and flour.
  • Gradually add the dry ingredients to the wet mixture, mixing until combined.
  • Roll the dough into balls about 1 inch in diameter, and then roll them in granulated sugar.
  • Place the rolled balls on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for about 10-12 minutes, or until the edges are set.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Refrigerating the dough for at least 30 minutes can enhance the cookie's texture. For variation, consider adding chocolate chips or nuts. Store in an airtight container at room temperature or freeze for longer storage.
