Instructions
 

Marinate the Chicken

  • In a large mixing bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Mix well.
  • Add the chicken breasts to the marinade, ensuring they are thoroughly coated. Cover with plastic wrap and let rest in the refrigerator for at least 30 minutes.

Grill the Chicken

  • Preheat your grill or grill pan over medium heat.
  • Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • Allow the chicken to rest for a few minutes before slicing thinly.

Prepare the Tzatziki Sauce

  • In a medium-sized bowl, mix Greek yogurt with remaining minced garlic, lemon juice, a pinch of salt, and chopped parsley. Stir until smooth, then set aside.

Assemble the Bowls

  • In a serving bowl, layer cooked rice or quinoa as the base.
  • Top with sliced grilled chicken, diced cucumbers, halved cherry tomatoes, sliced red onions, olives, and crumbled feta cheese.
  • Drizzle with tzatziki sauce and garnish with fresh parsley.

Notes

For meal prep, keep ingredients separate until ready to serve. Can substitute chicken with plant-based protein. Enhance the tzatziki with fresh herbs like dill or mint for added flavor variety.
