  • 4 pieces boneless, skinless chicken breasts Ideal for marinating and grilling.
  • 4 slices pepper jack cheese Adds creamy heat.
  • Fresh cilantro Fresh cilantro, for garnish For garnish.

Marinating the Chicken

  • In a large bowl, combine salsa verde, olive oil, lime juice, ground cumin, salt, and black pepper. Whisk to blend.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 30 minutes to 2 hours.

Grilling the Chicken

  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade and discard any excess marinade.
  • Grill the chicken for about 4-5 minutes on each side, or until the internal temperature reaches 165°F.
  • During the last minute, place a slice of pepper jack cheese on each breast and close the grill lid to melt the cheese.

Serving

  • Allow the chicken to rest for a few minutes before garnishing with fresh cilantro and serving with lime wedges.

Notes

Add spices like paprika or garlic powder for extra flavor. Store-bought salsa verde is also acceptable. Experiment with different cheeses if desired.
