  • 8 small corn or flour tortillas Use based on preference.
  • 2 cups enchilada sauce Store-bought or homemade.
  • 2 cups shredded cheese Cheddar, Monterey Jack, or a blend.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef and the diced onion for about 5 to 7 minutes until the onion turns translucent and the beef is thoroughly browned.
  • Add minced garlic, ground cumin, and chili powder to the mixture, sautéing for another minute.

Assembly

  • Spoon a portion of the beef mixture into the center of each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  • Pour enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.

Baking

  • Bake uncovered in the preheated oven for about 20 to 25 minutes, watching for bubbling sauce and melted cheese.

Notes

Experiment with different fillings like black beans and corn. Use pre-cooked meats for a quicker option. Store leftovers in an airtight container for up to three days.
