Ingredients
  

For the Filling

  • 1 lb Ground beef Lean ground beef for less grease.
  • 1 cup Onion, finely chopped Enhances flavor with sweetness.
  • 1 cup Enchilada sauce Store-bought or homemade.
  • 8 pcs Tortillas Flour or corn, depending on preference.
  • 2 cups Shredded cheese Cheddar, Mexican blend, or your favorite.

Spices

  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tbsp Cooking oil For sautéing onions.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, add cooking oil and sauté the onions until translucent (3-5 minutes).
  • Add ground beef to the skillet and cook until browned (7-10 minutes). Drain any excess fat.
  • Stir in cumin, chili powder, salt, and pepper. Mix well and remove from heat. Allow the beef mixture to cool slightly.

Assembly

  • In a baking dish, pour a small amount of enchilada sauce to coat the bottom.
  • Fill each tortilla with a scoop of the beef mixture and cheese, roll tightly, and place seam-side down in the dish.
  • Once all tortillas are filled and arranged, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Baking

  • Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
  • Let the enchiladas settle for a few minutes before serving.

Notes

Feel free to customize with toppings like sour cream or guacamole. Enchiladas can be prepared ahead of time and refrigerated before baking.
