Instructions
 

Preparation

  • Chop the vegetables: dice the onion, slice the carrots, and cube the potatoes.
  • Heat a large pot over medium heat and add a splash of olive oil.

Cooking

  • Add the ground beef to the pot, breaking it into smaller pieces as it cooks. Brown until fully cooked (about 5-7 minutes).
  • Drain any excess fat from the pot.
  • Add the diced onions, carrots, and potatoes into the pot and sauté for about 5 minutes until the onions are translucent.
  • Pour in the beef broth and add diced tomatoes, garlic powder, thyme, salt, and pepper. Bring to a gentle boil.
  • Reduce heat, cover the pot, and let it simmer for 30 to 40 minutes until the vegetables are tender.

Notes

For a thicker stew, mix cornstarch with cold water and stir it in during the last few minutes. Pairs well with crusty bread or over mashed potatoes.
