Preparation

  • Preheat your grill to medium-high heat.
  • Cut aluminum foil into squares about 12 inches by 12 inches.

Assembly

  • Place a seasoned chicken breast in the center of each foil square.
  • Season the chicken well with salt and pepper.
  • Layer pineapple slices on top of each chicken breast.
  • Drizzle barbecue sauce over the pineapple and chicken.

Cooking

  • Fold the aluminum foil over to create a tightly sealed packet.
  • Place the foil packets on the preheated grill.
  • Grill for about 20 to 25 minutes, checking that the internal temperature of the chicken reaches 165°F.
  • Remove the packets from the grill and allow to cool slightly before serving.
  • Garnish with chopped green onions or sesame seeds if desired.

Notes
