  • 1/4 cup mayonnaise Provides creaminess.

Preparation

  • Bring a medium-sized pot of water to a boil. Add shrimp and cook until pink and opaque, about 3-4 minutes. Drain and let cool.
  • Dice the cucumbers and slice the green onions and cilantro. Set aside.

Mixing

  • In a large mixing bowl, combine cooled shrimp, cucumbers, green onions, and cilantro.
  • In a separate bowl, whisk mayonnaise and lime juice until smooth, then pour over shrimp mixture and toss gently to coat.

Chilling

  • Season with salt and pepper, cover, and chill in the refrigerator for about 30 minutes before serving.

Notes

For extra freshness, consider adding tomatoes or avocados. Shrimp should be firm and fresh. Store in an airtight container for 2-3 days, adding dressing just before serving.
