For the Mashed Potatoes

For the Glazed Carrots

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Rub the chicken breasts generously with olive oil and season with thyme, rosemary, salt, and pepper.

Cooking the Chicken

  • Sear the seasoned chicken breasts in a large skillet over medium heat for 4 to 5 minutes on each side.
  • Transfer the seared chicken to the oven and bake for approximately 20 minutes until the internal temperature reaches 165°F (75°C).

Preparing the Mashed Potatoes

  • Peel and chop the russet potatoes into uniform pieces.
  • Boil the chopped potatoes in salted water until tender (15 to 20 minutes), then drain.
  • Return the potatoes to the pot and mash with milk and butter until smooth and creamy. Season with salt to taste.

Preparing the Glazed Carrots

  • Boil the baby carrots in salted water until tender (5 to 7 minutes), then drain.
  • Return the carrots to the heat, adding brown sugar, butter, salt, and pepper; toss gently until glazed.

Serving

  • Plate the dish with a generous scoop of creamy mashed potatoes, place the herbed chicken on top, and arrange the glazed carrots around it.

Notes

For best results, reheat the chicken in the oven to maintain its crispiness. Fresh herbs contribute vibrant flavors.
